Apricot Coconut Almond Bars
Simple, fresh and good for you! You can’t go wrong. I tried these bars last week and I’m definitely in love. I’m all about simple recipes and this is definitely one. It’s a must try!
Apricot coconut almond bars
1 1/2 cups dried apricots (mine look brown because I used organic)
1/2 cup raw almonds
2 Tbsp unsweetened shredded coconut
Coarse salt
1/2 oz dark chocolate, melted
parchment paper
9-by-5-inch loaf pan (I used a pie dish and it won’t just fine!)
Pulse apricots, almonds, coconut, and a pinch of salt in a food processor until finely ground.
Line your pan with parchment, leaving an inch overhang on all sides. Transfer mix to pan and press firmly to form bar. Drizzle or spread chocolate and sprinkle with some coconut. Transfer to the refrigerator and leave until firm. (Or since it’s summer I stored my bars there for most of the time… oh, the humidity!) Slice into squares and store in airtight container for up to 5 days.
